Soak tomatoes in garlic and Tantillo California Extra Virgin Olive Oil.

Season with salt and pepper to bring out the flavor.

Add peppers to tomatoes and mix, followed by red onions.

Sprinkle in oregano.

Rip mint, basil and parsley and add to mixture.

Add scallions. Drizzle Tantillo California Extra Virgin Olive Oil.

Use a generous amount to soak the vegetables.
