 Fresh Cortette pasta
 Garlic
 Onions, diced
 Tantillo Extra Virgin Olive Oil
 Tomatoes, chopped
 Sausage, pre-cooked and browned
 Broccoli rabe, pre-cooked
 Stock
 Tomato puree
 Parmesan cheese
 Ricottta cheese

Add pasta to boiling water, cook 30 seconds to a minute. (fresh pasta cooks very quickly.)

Saute garlic and onions in oil.

Add tomatoes, sausage and broccoli rabe. Mix together.

Stir in stock to start the sauce.

Add tomato puree, stir- sauce will start to bind together.

Move pasta to sausage pan and stir into the mix.

Drizzle Tantillo Extra Virgin Olive Oil and parmesan cheese, mix together.

Add 4 scoops of ricotta cheese, stir into the pasta. Plate and enjoy!
