
Add tortellini to a pot of salted boiling water
Cook until they float, about 6-8 minutes
Reserve about 2 oz. of the water when done
Remove sausages from their links and cut into small pieces
Heat a small amount of Tantillo California Extra Virgin Olive Oil in a deep saute pan, then add sausages
Once browned, remove from pan and set aside
Degrease saute pan, then heat the rest of the Tantillo California Extra Virgin Olive Oil over low heat
Add garlic and cook until it’s translucent and slightly browned
Add salt, pepper and red pepper flakes to taste, then add diced bell peppers
Sauté 6-7 minutes, then add diced tomato and browned sausages along with the reserved pasta water
Add cooked tortellini and stir to combine
Allow to simmer for about 2-3 minutes, then serve
