Sweet Potato Chanukah Latkes

 Sweet potatoes, shredded
 Leeks, chopped
 Egg
 Flour
 Salt, pepper
 Vegetable Oil

Shred the sweet potatoes, and soak in water so they don't turn. Drain in water and mix together with leeks.

Season with salt and pepper. Make patties. In a separate bowl, beat the eggs. Dip each latke in the eggs, and then coat with flour.

Add vegetable oil to a pan, and turn on high heat. When the vegetable oil is very hot, add the latkes to the pan. Turn when each side gets crispy.

Once they are finished and plated, top with apricot jam.
