 1 small watermelon, cubed
 dash of salt
 0.25 cup ricotta salata, chopped small
 0.25 red onion, thinly sliced
 mint, chiffonade
 2 tbsp Tantillo California Extra Virgin Olive Oil
 Tantillo Balsamic Bliss, to taste

Add watermelon to a medium sized bowl and season with salt.

Next, mix in ricotta salata, red onion and mint.

Toss together, and then pour Tantillo California Extra Virgin Olive Oil on top.

Plate, and drizzle Tantillo Balsamic Bliss over salad.
